My husband found a recipe in the Costco Connection magazine (of all places!) that looked good. I tweaked it to make it a little healthier. It was VERY quick and easy and tasted really good. We loved the different textures and it was a nice change from plain old tacos. Yummy!!

1 lb ground turkey
1 small onion, finely chopped
2 cups canned black beans (drained and rinsed)
2-3 TBSP taco seasoning (depending on your liking)
1 (15 oz) can petite diced tomatoes, drained
8 taco shells or corn tortillas
1 c shredded cheese
any topping you would like to add
Brown the turkey with the chopped onion until browned. Stir in black beans, taco seasoning and diced tomatoes, and let simmer over medium low heat for 5 minutes.
Serve in tortillas or shells with cheese and toppings.
